This weekend I invited my good work friend, MG, over for Sunday dinner. I needed a guinea pig to test a recipe idea I had for cauliflower marsala. The concept came to me when posting one of our Garden of Life recipes Cauliflower Steaks with Tomato Chutney. I thought…”I bet cauliflower would be great in a creamy marsala sauce.” And it was! Vegetable Marsala Sauce:
1/2 head of cauliflower chopped
1 tablespoon butter as needed
8 ounces baby bella mushrooms, sliced
4 cloves garlic, minced
1 cup dry Marsala wine
1 1/4 cup water
1 1/2 teaspoon of Better Than Bouillon Seasoned Vegetable Base
1 – 3 teaspoons of corn starch
3/4 cup heavy cream (or coconut cream for a vegan sauce)
2 tablespoons fresh chopped parsley
Sea Salt and Black Pepper to taste
INSTRUCTIONS
Melt 1 tablespoon of butter in a 12-inch pan or skillet over medium-high heat. Add the mushrooms and sauté for 2-3 minutes until browned. Add the garlic and cook until fragrant, about 1 minute. Transfer to a bowl and set aside.
In the same pan or skillet, heat 1 tablespoon oil and 2 tablespoons butter over medium-high heat. Add cauliflower and sauté for about 6 to 8 minutes until tender. You may have to add a bit of water to keep the cauliflower from burning or sticking to the pan. Transfer to a bowl and set aside.
Using the same pan, pour in the Marsala and the broth and simmer until reduced by half and starting to thicken, (about 10-15 minutes). You may add a bit of corn starch for a thicker sauce.
Add sautéed vegetables and cream.
Add sea salt and pepper to taste.
Serve over cooked angel hair pasta (or pasta of choice), rice, potatoes, cauliflower rice or zucchini noodles, and top with chopped parsley.
