Beet Hummus Recipe

Ingredients:

  • 1 medium-sized beet, roasted and peeled
  • 1 can (15 ounces) of chickpeas, drained and rinsed
  • 2 cloves of garlic, minced
  • 2 tablespoons of tahini (sesame paste)
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Optional garnishes: chopped parsley, sesame seeds, a drizzle of olive oil

Instructions:

  1. Roast the Beet: Preheat your oven to 400°F (200°C). Wrap the beet in aluminum foil and place it on a baking sheet. Roast for about 45-60 minutes or until tender. Once cooled, peel the beet.
  2. Blend Ingredients: In a food processor, combine the roasted beet, chickpeas, garlic, tahini, and lemon juice. Blend until smooth.
  3. Add Olive Oil and Seasonings: While blending, gradually add the olive oil until the hummus reaches your desired consistency. Season with salt and pepper to taste.
  4. Garnish and Serve: Transfer the hummus to a serving bowl. Garnish with parsley, sesame seeds, and a drizzle of olive oil if desired.
