These easy no bake chocolate cookies are vegan, gluten free, and totally yummers! Only 6 ingredients and they whip up in 10 minutes or less. The best part is that you can totally control the richness of the chocolate!

These no-bake chocolate cookies are so easy to make.

With the hectic schedules of the holidays, it is nice to be able to whip up a quick batch of cookies for our lighter festivities or to pair with a nice red wine.

With only 6 ingredients, they whip up in ten minutes or less.

Ingredients:
1 cup almonds
1-1/2 cups rolled oats
1-3 Tablespoons of Cacao Powder
Pinch of sea salt
1/4 cup Garden of Life coconut oil
2 Tablespoons Maple Syrup

Place almonds in a food processor and pulse to chop coarsely. Add rolled oats, desired amount of cacao powder and salt and process until coarse.  In a large bowl, whisk together maple syrup and melted coconut oil. Slowly add the dry mixture to your wet ingredients. Form into individual balls and flatten with a fork. Keep refrigerated until ready to serve. Makes 16 cookies.

Use a fork to press the cookies down.
