I like to use orange cauliflower for this recipe because the color is so warm and appealing. However, white cauliflower is also a great option. There is virtually no difference in taste.
This recipe includes turmeric and cayenne pepper. In addition to adding a kick of flavor to this dish, they both have added health benefits and are known to decrease inflammation.
Vegan Broccoli Cheddar Soup Recipe
Ingredients:
1 Cup raw cashews
1 Thumb sized piece of kombu (sea vegetable)
4 Cups filtered water
1 Head Cauliflower Chopped
1/4 Cup nutritional yeast
1 tsp Turmeric
1/2 tsp Shoyu Sauce
2 Tbls Avocado or Coconut oil
1/2 tsp Smoked Paprika
1/4 to 1/2 tsp Cayenne (for desired heat)
1 Head of Broccoli Chopped Small
1 1/2 Cups chickpeas
Salt to taste
Soak cashews and kombu in 1 cup of water for 1 hour.
Steam cauliflower in remaining water until tender. Cool for about an hour.
In a high powered blender combine cashews, cauliflower, nutritional yeast, turmeric, shoyu sauce, oil, smoked paprika and cayenne until smooth and creamy. Transfer back to large pot.
Add cooked chickpeas and broccoli and heat on medium low for about 5 minutes while stirring continuously. Add salt to taste and serve.
Six to eight servings.
I just love this soup. Make a big pot an enjoy throughout the week. Just ladle some in a small pot and heat on medium low while stirring continuously. In five minutes you will be enjoying a warm bowl of soup that is nourishing to the soul. Add a side dish of steamed brown rice with salad and you have a quick and healthy meal.
